Ingredients:
1 c Green Split Peas
2 q Water
1 Onion (Small, Chopped)
1 Carrot (Peeled and Grated)
1/4 tsp Black Pepper
2 c Diced Ham
2 Bay Leaves
1/2 tsp Salt
1/2 tsp Basil
1 Cayenne (Sprinkle)
Instructions:
Boil all ingredients vigorously 20 minutes, uncovered. After 20 minutes cover pot, cook barely boiling about 1 hour or until vegetables are soft enough to blend. Remove bay leaves and blend soup using small quantities at a time. Reheat using clean sauce pan. Add 1/4 tsp thyme, simmer 20 minutes. Serve in hot bowls with croutons.
