2 c Hadley's Degret Noor Dates
2 Pound Cakes (prepared)
1/3 c Raspberry Jam
3 pt Chocolate Frozen Yogurt (softened)
3/4 c Hadley's Walnuts (chopped)
2 t Orange Peel (grated)
Trim brown edges from one pound cake. Slice cake horizontally into three slices. Spread 2 slices with jam, stacking them, and cover with remaining slice. Slice loaf vertically into ¼ inch thick slices and arrange around the sides of a 9-inch spring form pan, so the jam stripes are vertical. Trim remaining pound cake, and slice horizontally into three slices. Cut slices into pieces that will cover bottom of spring form pan. Meanwhile, mix together frozen yogurt, chopped dates, walnuts and orange peel until well combined. Spread into spring form pan. Cover with plastic wrap and freeze until firm.
To serve, trim edges flush with filling, if necessary. Remove cake from pan.
Garnish with sliced dates, chocolate curls and orange peel, if desired.
